On the Move Again!

On the Move Again!

Good Morning, Dear Friends!
So, as you may have noticed, last week I posted for the first time in about 6 months.  During the time between December and Now I was still adjusting to AZ Life and I didn't really have much I wanted to share.  Or much that I thought you would really want to hear about.
For some reason I wasn't doing much of my normal cooking and crafting.  I was doing more exploring--which you probably noticed if you follow me on Instagram @PJsPilates and/or Facebook.

I'm Baaaaaaaaaack...

Hello Dear Friends!  Remember me?

It has been quite some time since I posted anything, as you know.  For the past few months I've been pretty good at keeping up on my Instagram (follow me @PJsPilates) and my PJsPIlates Facebook page (friend me!), but not so much for this little blog.
Honestly, the transition from WI living to AZ life has been a little rough at times.  My Dear Husband has been super supportive, and having my daughter right next door at ASU has been very comforting.

Good Evening, Friends!
Those of you who follow me on Instagram (@PJsPilates) might have noticed that I've been taking part this week in a Summer Photography Challenge through the SITS Girls blog. Today's challenge was food photography.
I wanted to keep it simple, so I took the opportunity to share with you a super-easy recipe that I've been making for a long time.

Unpacking, Part 1

Good Afternoon, Dear Friends!
I have a little treat for you.  Because you deserve it.
Ready?
It's a peek into my AZ Home!  Inside!
It's been a little bit Jen-ifyed, since we brought a few of my things with us on the drive here.
Here's the disaster after we brought all the stuff inside when we arrived last Thursday:

Moving Day has Come and Gone...

Moving Day has Come and Gone...

Good Morning Dear Friends!
I'm writing to you from Sunny Arizona, where it is a fantastic 104 degrees.
It's so hot I've taken up swimming.
For those of you who know me, that should tell you just how hot it is. (For those of you who don't:  Jen doesn't go in the water because she hates being cold.  That's not a problem these days.)
And I'm loving every hot, sweaty minute of it!
(Have I mentioned it's hot?)

Kale-and-Quinoa-Stuffed Mushrooms for Dinner!

Kale-and-Quinoa-Stuffed Mushrooms for Dinner!

I don't know how it is for all of you, but when I am trying to come up with something to make for dinner it usually goes one of two ways:
I find a recipe I want to make and I buy all the stuff I need to make it or, more often, I have a bunch of random food in the fridge that needs to be used up and I make up or modify a recipe to include whatever I've got.

Full Dis-Clothes-Sure

Full Dis-Clothes-Sure

This week's mission was to go through my clothes.
I know what you are thinking:  "Jen, you did that already.  Why are you doing it again?"

1)  I am finding that as the moving date approaches I am willing to part with more and more stuff.  Mostly because I'm lazy and I don't want to pack it.
2)  Our AZ home is spacially challenged.

Airport Salad with Barley, Kale and Edamame

Airport Salad with Barley, Kale and Edamame

As most of you know, I travel A LOT back and forth between my Happy Home in WI and my Happy Home in AZ.  Glamorous and exciting, no?
No. (I'm making the Grumpy Cat face.)
For many reasons traveling isn't what it's cracked up to be (that could be a whole post in itself!), but for me the biggest challenge is that most airports don't have healthy stuff to eat. And if you know me, you know that letting me get too hungry is not a good idea.  I can be a little owly.

So I always BYOF.  (Bring Your Own Food.) and I have learned what works and what doesn't.
